Expertly forged by Mutsumi Hinoura, a fourth-generation bladesmith from Sanjō, Niigata, the Ajikataya 210mm Gyuto is a masterfully crafted Japanese chef’s knife designed for all-purpose kitchen tasks—from slicing proteins to fine vegetable work. As part of the revered Ajikataya (味方屋) line, this blade embodies over a century of traditional blacksmithing passed down through generations. Constructed with high-carbon White #2 steel (Shirogami #2) and finished with a rustic kurouchi (黒打ち) texture, this Gyuto delivers superb edge retention, a fine-grain structure for effortless sharpening, and an incredibly responsive cutting experience. Its gently curved belly and pointed tip allow for smooth rocking motions, clean slicing, and precision detail work.
