Phu Quoc pepper is grown on small family plots by passionate producers, native to the island for several generations, who preserve a unique traditional know-how. The harvest takes place between February and May. The clusters are carefully stripped by hand, then the berries are washed and sun-dried for several days. A meticulous sorting is then carried out to keep only the finest berries. This pepper develops woody and resinous notes, accompanied by a gourmand touch of dried fruit and candied citrus. Its heat is lively and clean, and offers a beautiful persistence on the palate. Usage tips: We recommend grinding or roughly crushing it at the last moment. It is very versatile.
