The beautiful family run El Carmen Estate is located in the Santa Ana mountains in Western El Salvador. They produce this lovely Pacamara which actually originates in El Salvador. This Pacamara is a natural anaerobic processed coffee. They seal the sherries in drums for 5-6 days to achieve the desired effect, then dry them in the cherry.
