Farms located 450 meters away with deep and poor alluvial and clay-calcareous soils. Mediterranean with continental influence. Low rainfall (an average of 400 mm of rainfall per year). Dry summers and long, harsh winters with marked temperature fluctuations throughout the seasons. PREPARATION NOTES Manual harvest in containers that are cooled and stored at 5ºC for 12 hours. I go through the selection table before winemaking. Pre-fermentation: 2 days at a controlled temperature between 6 and 8 º C. and fermentation for 12 days at a controlled temperature of less than 2ºC in order to keep the fruity character and freshness intact.
