AOC Castillon Côtes de Bordeaux Grand Vin de Bordeaux Cuvee Elegance Winemaking: Harvesting is carried out using the latest technology. The machine harvests only ripe grapes by vibrating the vine. A 6-person manual sorting table and crushing are carried out as soon as the grapes are received in the cellar. We practice 72 hours of cold maceration after fermentation, in order to extract a beautiful color and a maximum of aromatic precursors. Then comes alcoholic fermentation (10 days) and finally a 30-day maceration under marc, which will give the wine all its tannic structure and reveal the qualities of the vintage. Breeding/Assembly: 16 to 17 months of aging, followed by a family blend with our oenologist: 40% in new French oak barrels, 50% in French oak barrels containing 1 and 2 wines and 10% in cement tanks. Bottling is carried out at the Château.
