Inspired by the beautiful bright color and fragrance of Meyer lemons, we simmer Meyer lemon and lime juices and fruits with les collines fresh rosemary, then strain to create a clear, luminous jelly that packs a pucker. To pair - with chèvre, lamb, and chicken; to glaze - grilled or roasted salmon, a fruit tart, or Key Lime pie; to swirl- into vanilla ice cream or lemon mousse. Makes an excellent Thom Collines cocktail.
