Pasta di Gragnano IGP, bronze drawn, slow drying. Pasta from Gragnano IGP produced exclusively with 100% Italian wheat semolina. The passage in the bronze dies gives it a particular roughness which, unique in its kind, means that any sauce can bind perfectly to it, almost to wrap it up. Drying is characterized by a slow and low-temperature process, an ancient system that it allows to maintain the organoleptic characteristics of the raw materials used unaltered. The master pasta maker personally participates in all stages of production, during which some products are literally made by hand: Fusilli and Candele, among others, are the practical demonstration of this.
