This simple but tasty sauce is made with chopped tomatoes and mixed vegetables: aubergines, carrots, zucchini and peppers. The vegetables, which are used, are carefully selected from the garden as our grandparents once did and give a light taste and a mix of fresh colors that recall summer. It is also suitable for those who do not really appreciate vegetables since they are reduced to a not too large dice. Do not love the vegetable cubes... you can always blend and thus obtain a fantastic vegetable cream that, why not, can also be used on cruciated bread and create croutons for your aperitifs or appetizers.
