Kitchari balances the three constitutional types, or doshas: Vata, Pitta, and Kapha. Brilliantly yellow from turmeric root, this meal is not only beautiful but also healthy. Delicious on its own, kitchari is wonderful paired with a wide array of vegetables. Add a handful of chopped seasonal fresh veggies 10-15 minutes before serving.
