It is a natural white wine that is mineral and lively. We harvest the grapes from a partner winemaker in Île-de-France, then bring the whole grape clusters to Courbevoie (a suburb of Paris) where they are vinified. They are immediately pressed and vinified in stainless steel tanks to maintain tension. Although unusual, we decided to carry out malolactic fermentation to break the sharp acidity of the Sauvignon and bring roundness.
