Extra thick puree composed only of Italian tomatoes, in this case 100% Parma tomatoes, harvested at perfect ripeness and processed in a few hours. Characterized by the absolute body that “adhes” to the pasta: a property obtained thanks to very slow cooking in a bain-marie, which concentrates the pulp, enhancing its sweetness and avoiding the acidic aftertaste. Sweetness that we find even more exalted in that of Pachino Cherry Tomatoes.
