Trofie is a type of pasta typical of Ligurian cuisine, with an elongated and thin shape, believed to be native to Sori, in the province of Genoa. The shape of the pasta is given by the peculiar curled character in the shape of a carpenter's chip, called banché rice. The rather small shape and size of a trophy are important factors for its organoleptic qualities. The trofie should be seasoned, almost exclusively in the local version, with pesto, a typical Ligurian beaten wine packed with Genoese basil. A variant (also used for other types of pasta seasoned with pesto) involves boiling with new potatoes and green beans.
