Cowboy Rub is the ideal to give red meat top umami. When in touch with direct heat, this spicy mixture gives off an unmistakable and authentic scent, especially when coffee, pepper and garlic emerge. It goes with direct cooking, as it is sugar-free. BBQ King pitmasters suggest to perfectly dry the meat with blotting paper, then to brush it lightly with vegetable oil and, finally, to sprinkle it with Cowboy Rub.
