Deba knives are mainly used when filleting fish. The characteristics are "thick and heavy" and "single-edged." While most knives are made with a double edge, deba knives are made with a single edge. This style originated in Japan, and many knives used by Japanese chefs are single-edged. As shown in the photo, the blade is angled on one side. When you push the knife against the ingredients, it tends to move away. It creates a diagonal cut when pushed straight.
