ASSEMBLAGE whiskeys are the result of the collaboration between Aymeric oenologist, father of French whiskeys A. Roborel de Climens, and Cedrik & Axel. The three people from Bordeaux have combined their know-how in order to design a range of whiskeys imbued with their common passion: the vine. Following the excellent feedback on the taste qualities of WHISKY ASSEMBLAGE Collection No. 1, we wanted to keep the recipe by selecting, again, ex-Bordeaux wine barrels and thus offer you Collection No. 1.04 in a limited edition of 808 bottles. Aging in old Bordeaux wine barrels allows ASSEMBLAGE to reveal the subtle flavors of the various grape varieties. Merlot gives it notes of red berries, prunes, undergrowth and spices, while Sémillon, Sauternes, gives it nuances of candied fruits, acacia flowers and honey. As for Sauvignon, it gives it freshness and slight touches of bitterness.
