Fresh, crisp and bright green, our bay leaves arrive from an organic farm on the Ionian. The idyllic setting where they grow infuses them with notes of nutmeg and cinnamon and of remarkable quality. They're harvested by hand, dried naturally at the source, and sorted one by one with love at Daphnis and Chloe. We're incredibly proud of them! The sun-loving bay trees are native to the southern Mediterranean region, where they've been a culinary staple, and a mythological subject, since antiquity. Their leathery, aromatic leaves add a balsamic, slightly spicy flavor to soups, stews, marinades and many other home-cooked meals. Bay leaves make your legumes more digestible making them an essential ingredient for Greek lentil soup and are the ultimate companion when making Italian ragus. You only need one leaf for a stew of 4 people. Remember to remove the leaves before serving, allowing just the essence to remain.
