This cloud-kissed farm was purchased by Francisco Cardona Martin in 2002, who aimed to produce top-quality coffee through innovative techniques and selective planting of Caturra and Bourbon varieties. Known affectionately as "Chico Cardona," Francisco invests nearly all profits back into the farm and is a beloved figure in the community, known for his kind and cheerful nature. His passion for bees adds another dimension to the farm, not only providing inspiration for the name La Colmenita, but also producing a delightful honey that provides a secondary income for the farm. This is a washed process coffee, meaning the fruit and mucilage is removed from the beans before it is placed into large vats of water to ferment for 24-48 hours. It is then removed from the water and rinsed before being laid out to dry in the sun.
