Wonderfully smoked New Mexico Hatch Chili's with a bit of Kosher Sea Salt, a sprinkle of pure cane sugar, dash of Garlic and Onion, a hint of sweet smoked Paprika and rounded out with a generous helping of Cilantro.  Think chicken enchiladas,  a different twist on tacos, cheesy Queso Dip.
