To make sauces, tomatoes are harvested when ripe and transformed into tomato pulp with traditional tomato puree, basil sauce, arrabiata sauce and vegetable sauce. With basil, we obtain green pesto, an excellent dressing ready both for a first course and for garnishing delicious croutons.
