Discover one of our favorite antipasti: our whole pitted Peranzana olives, which we also cultivate for our OLIO DI SERRA vintages. These Peranzana olives are pitted and then lightly roasted with aromas and spices reminiscent of the flavors of old rural recipes. Finally, they are preserved in a mixture of virgin olive oil and wine vinegar to control their bitterness. The Peranzana olive variety is native to San Severo. It is unique and highly prized for its high oleic qualities. It is slightly bitter and is mainly cultivated for olive oil and table olives when ripe. These vegetables are grown and processed by two artisan brothers on their family lands in the Gargano Natural Park (Apulia, Italy) - a major agricultural territory in the Alto Tavoliere farming area - and are BRC food certified. They are harvested at maturity, at the best time of the season, to ensure maximum freshness and flavor. Peranzana olives are ideal as antipasti or as ingredients for starters, side dishes, sandwiches, or even on pizzas. Personally, we love adding them to our pasta dishes or pairing them with our bresaola and buffalo mozzarella! + Bitterness and pungency are the two irrefutable proofs of the quality of olives.
