It has an acidity of 0.14% and has a higher concentration of polyphenols and natural antioxidants, with more beneficial effects on health. With the early harvest, we obtain an oil with a higher chlorophyll content, with herbaceous and fruity nuances in both aroma and taste. Limited mintage.
