Crafted using a traditional saignée extraction method, Méthode de Saignée is a clean, approachable fish sauce made from sustainably harvested Lake Superior herring and Oregon Coast sea salt. Unlike many conventional fish sauces, our process reduces the strong aromas often associated with the category while preserving the savory complexity and umami depth that chefs and home cooks rely on. The result is a lighter-bodied fish sauce with exceptional versatility in both everyday cooking and refined culinary applications. Made in St. Paul, Minnesota.
