Our fermented hot sauce is a seasonal ferment that varies depending on the availability of locally grown peppers. Each batch is unique with its ingredients and ferment time which can vary from 3 months to over a year. It goes well on eggs, tacos, burgers, fried potatoes, and most anything! Natural fermentation may continue during transit, which can cause pressure to build beneath the lid, occasional lid bulging, and some brine seepage. This is normal and does not affect product safety or quality. Orders are shipped at room temperature. Upon receiving your shipment, please wipe down any affected jars, taking care not to break the safety seal, before shelving. While our products are shelf stable, we strongly recommend refrigerated displays to slow the fermentation process, and maintain the best possible flavor and texture for your customers. In some cases, kraut brine will leak onto packaging material and cause a strong, unpleasant scent. This does not compromise product integrity. Just wipe product down before shelving and discard all affected packaging. Please educate your customers that there may be pressure under the lid and to open jars slowly over a sink or bowl.
