They represent the fundamental processing methods: short steaming (green), full oxidation (black) and simple natural drying (white). 1. Sencha Fukujyu Organic I sourced it in Shizuoka. It's the essence of Japanese green tea: a short steaming (asamushi) that preserves the chlorophyll. The liquor is a bright olive green. You'll find a frank, very vegetal umami, ideal to wake you up without jitteriness. 2. Earl Grey Deluxe A classic, but crafted without compromise. A robust black tea base from India and Ceylon, which I paired with real essential bergamot oils from Calabria (with no synthetic flavoring). It's the quintessential afternoon tea. 3. Pai Mu Tan (White Peony) For the evening, I offer this spring harvest from Fujian. The processing is minimal: the silver buds are slowly dried. In the cup, it has a silky, almost velvety texture, with extremely gentle floral notes. Guide My Tasting Journey I suggest a progressive path. Simply follow the evolution of caffeine and flavor intensity over the course of your day. The Suggested Ritual Morning (Sencha Fukujyu): Vegetal freshness. Its umami gives a clean boost, and its moderate caffeine (30–40 mg) will spare you the "coffee crash." Afternoon (Earl Grey Deluxe): Robustness. It supports digestion well after a meal and gives you a fine energy lift (50–60 mg). Evening (Pai Mu Tan): Contemplation.
