Leaves that grow in spring are more flexible, with a higher water content that allows the leaves to oxidize faster. The result is subtle but offers a seasonal variation in the flavor profile. This batch tastes like pastries with a balanced creamy and vegetal flavor. It also has the buttery/milky characteristic that popularized this high mountain oolong. The large leaves allow for several infusions at higher temperatures.
