Description Grown and blended in Yame using first-harvest leaves, this ceremonial matcha is made exclusively from the Yabukita and Saemidori cultivars. The result is something you'll notice immediately: a vivid green colour, a deep smoothness that never crosses into sharpness, and an aroma that opens with fresh, earthy warmth and quiet nutty undertones. Low astringency. No hollow vegetal flatness. Just the full, composed character of Japanese ceremonial matcha done properly. Features a creamy, buttery character with a deep umami finish, and that quiet hint of popcorn that makes this matcha genuinely hard to forget. As a Yame-grown matcha, it naturally carries a deeper umami character than many lighter ceremonial matchas. Umami is often described as a rich, savoury depth that adds body and complexity to the cup, similar to the satisfying richness found in broths, aged cheeses, or slow-cooked foods, but expressed here in a clean and refined tea form. Why Yabukita & Saemidori Cultivars? Most ceremonial matcha is made from a single cultivar. We chose two for this matcha and it matters. Yabukita is the most widely cultivated tea plant in Japan, and for good reason: it delivers exceptional consistency season after season, with a naturally sweet, well-rounded base and reliable umami depth. When grown in Yame's climate and shaded in the traditional way, it produces leaves with a richness that more exotic cultivars often can't match for regularity. Saemidori, whose name translates roughly to "vivid green", is prized for exactly that: its colour is exceptional.
