Description

Known affectionately by many names - coppa, capicola, and, famously, gabagool - Dry-Aged Capicola has served as a decadent aged Italian staple for centuries. Ours is made in a very traditional style, utilizing the tender, whole-muscle meat running along the neck (“capo,” in Italian, translates to head; “collo” is neck). We then encrust each piece it in a delicate and light blend of salt, fresh garlic and whole black peppercorn before aging for 6-8 months. The end-result is a beautifully marbled, decadent addition to any antipasto platter or charcuterie board. By keeping seasoning to a minimum, the naturally rich flavor of dry-aged NC-raised pork shines.

The taste is not good. We opened one to sample and the taste is so strong, bordering a rancid fat flavor. I was expecting much better considering the price. We raise sheep for meat and I’ve never experienced that off taste before.
