In the Calabrian homemade appetizer, the eggplant fillets in oil cannot be missing, which are usually accompanied by spicy sausage, capsicum, stew and pecorino cheese. Fillet eggplants in oil are one of the best and most used preserves in Calabria, often self-produced at home by aunts and grandmothers. Our fillet eggplants are processed by hand in compliance with the recipes used in Calabria precisely for the self-production of this preserve. In fact, in our eggplants we include l0rigano, parsley and the inevitable non-spicy chilli pepper.
