Our delicious Kalamata organic olives in brine are not only particularly tasty but also true nutrient bombs! They come from the agricultural cooperative Rovies on our beautiful island of Euboea and are processed there with special care. The olives are cured with their pits using the Greek method and debittered. The process takes 8 months and is much more time-consuming because no caustic acid is used. This preserves vitamins and antioxidants. Additionally, the process is more environmentally friendly because it uses significantly less water than the Spanish and Californian methods. During the debittering of the olives, caustic acid (NaOH - alkaline solutions) is not used.
