- Variety: Arabica - Yellow Icatu - Roasting degree: light to medium The late harvest comes from the Sao Silvestre farm near the town of Carmo do Paranaiba in the state of Minas Gerais. For several generations, the Andrade family has been running this farm at an altitude of 1,000 to 1,100 meters. The coffee is processed naturally. The freshly harvested coffee cherries are dried in the sun and then peeled. The late harvest is low in acidity. It is a mild coffee with notes of roasted nuts and chocolate. Roastmaster Heiko Rehorik was on site for three weeks in 2009 to see for himself the quality of the cultivation and processing.
