Wholesale Fusilloni

Fusilloni means "big spirals," an oversized version of the classic fusilli. Made from Senatore Cappelli wheat, this heritage grain grows nearly two meters tall and produces far less than modern varieties, but farmers continue growing it for one reason: taste. We stone-mill the semi-whole grain and dry it slowly for over 30 hours. The large spirals catch every drop of sauce to deliver big, rich, satisfying bites.
