Native to Colombia, the Amazon pepper has the particularity of being harvested before full maturity. This explains its yellow color, while most of its close cousins (like cayenne pepper) are red! The purpose of this early harvest is to allow the Amazon pepper to develop fruity and acidic notes. With a score of around 50,000 on the Scoville scale (equivalent to 8/10), it is a pepper with character, which combines spiciness and aromatic qualities. Amazon chili can be used whole, in a sauce for example, before being removed, or can be ground and fully incorporated into your preparations.
