Our soup consists of: Etruscan Black Lentils, Pearl Barley and Broken and Hulled Green Peas. It is an excellent food rich in protein, starch and minerals. In addition, it is also a rich source of crude fiber and iron. ♦ Preparation process ♦ In a pot, make a sauté with onion (or shallots), carrots and celery. Add some tomato and basil puree. Then pour the soup mixture into the pot and cover with hot water just enough to cover the mix. Boil everything over moderate heat for the indicated time. Finally, pour the soup into a plate and add some Extra Virgin Olive Oil. Soak no/ Cooking 30-40 minutes [pressure cooker 15' from the start of the whistle]. All of our legumes are grown in the open field by local farmers.
