Lapsang Souchong smoked black tea is perhaps among the most famous and distinctive Chinese teas and comes from the hills of Northern Fujian. The producers then developed a method to roll, oxidize, and dry their teas so that they would maintain their quality longer. Once the teas were oxidized, they were laid on bamboo baskets placed on racks in the drying room built over ovens that allowed heat to rise through the vents in the ceiling and the drying room.
