Obtained from strong wheat molitura, semolina is grounded again and aged to encourage the perfect doughs. With Its amber yellow colour, the balanced granulometria and the gluten elasticity, make the this semolina ideal for sprinkling and gold and fragrant food. Caputo uses a very slow grinding method, linked to the ancient art of milling.
