In fact it is a good indicator that the honey you are buying has gone under minimal treatment and still contains all the enzymes and pollen particles that makes honey a healthier alternative to processed sugars. The rate and consistency that honey crystallizes to is dependant on the nectar source that that particular batch of honey is made from. To return crystallized honey back to liquid, simply heat a pot of water, remove the pot from the heat source and place the jar of crystallized honey into the water. Over time the crystals will break down and return to liquid honey!
