The preparation of anchovies in Salmedina vinegar is carried out using completely handmade methods. The anchovy is frozen for more than 48 hours to eliminate the possibility of anisakis. A vinegar treatment of more than 24 hours and finally it is packaged in olive oil for direct consumption.
