A quality 2 years barrel-aged wine vinegar in barrique, with a rounded, smooth and particularly “winy” flavour, obtained from the fermentation of selected, high alcohol content Piedmont table wines. The prolonged, skilful ageing in oak barrique enhances its perfume and aroma thanks to the high percentage (1,4%) of alcoholic residue left during fermentation. Here are the qualities that make it truly unique: - a higher percentage of alcoholic residue; - lots more non-extractive components and volatile compositions; - a set of perfectly harmonious and correlated chemical, physical and organoleptic requirements.
