CERTIFIED ORGANIC The almond is a nut, covered with a green envelope and velvety to the touch (husk), which dries and bursts when ripe, leaving a walnut. When almonds are shelled and dried, their skin is brown. VIJAYA offers a selection of flaked almonds from Spain. Variety: VALENCIA (mix of varieties that may include: Marconas, Larguetas, Guara, Tuono, Lauranne, Ferragnes, Ferraduel, Malagueña, Fina, Cristomorto) HOW TO CONSUME IT: In tagines and fish cooked in the oven or in a pan (trout with almonds, for example). For dessert, in fruit salads, pastries (hedgehog with ½ poached pear and slivered almonds), frozen nougats, chocolate-almond rocks, tarts and cakes.
