A careful selection of Montepulciano pomace from Marche vineyards is distilled in a bain-marie using a discontinuous steam method. It is then aged in small oak barrels in a secluded, light-free environment. During the five-year aging process in the barrels where Vino Santo was present, the wood slowly imparts its aromas to the distillate, giving it a precious roundness. With a beautiful amber color, very warm, it releases a broad, enveloping fragrance with great personality. It combines the notes of wood and vanilla, which come from the slow maturation in barrels, with the strong aromas of undergrowth and ripe cherry from the originating grape variety. The years of aging give roundness to the taste. Rich in aromatic complexity, it is very smooth on the palate with initial hints of caramel that evolve towards red fruit in spirit, with final spicy notes.
