Our mussels come from the best located pans in the Galician estuaries, where they have the best food. They are selected by hand to achieve the best specimens with which the beard is cleaned manually and thoroughly and steamed. They are then chipped and thoroughly cleaned to remove fibers or biso and, finally, they are classified by size. They are then dehydrated to remove water from the product and prevent subsequent deterioration of the sauce, to guarantee its texture and obtain a special bouquet. The placement and packaging are done manually, adding a soft and characteristic marinade made from traditional recipes and with olive oil that reinforces the flavor of the mussel.
