It is a wine obtained from the drying of Malvasia Bianca, Pulcinculo (Grechetto) and Trebbiano Toscano. It is left to mature to the “mother” in traditional barrels (casks) for at least 3 years. There are several legends of the origin of the name, the most credited being the one that this wine was used for Holy Mass.
