Hail sugar, also known as pearl sugar, is a sugar with the consistency of hail-sized granules made from granulated refined sugar. The granules consist of a multitude of small, compressed, and fine crystals. This effect occurs when the classic refined sugar is moistened, pressed, and then dried in blocks. Delicious creations can be made with hail sugar. It can be used in a variety of ways in the kitchen, such as for sweetening tea and coffee, yeast pastries, waffles, sheet cakes, or Christmas cookies.
