Our sesame comes from organic, non-mechanic cultivation. Doing everything by hand ensures that the seeds are handled gently and not bruised, a detail that plays an essential role in the overall quality of the spice. The Evros region has been cultivating sesame seeds since 300 BC. The beginning of the harvest in late September has, for centuries, been a social event for the local community. During this period, once the sesame seeds have ripened, their fleshy, oval-shaped pods, which have been protecting the seeds all year, burst and split open and farmers begin to collect seeds by hand. The golden sesame of Evros has a nutty, earthy taste which becomes intensifies when freshly roasted. Toast them in a saute pan over medium heat for about 5 minutes, stirring constantly.
