Friselle or freselle are a product of Apulian origin, but they are widespread throughout Italy, especially in the south. It is a durum wheat tarallo cooked in the oven with a hard but fragrant consistency. To enjoy it, it is soaked in cold water for a time that depends on the individual taste and consistency of the cooked pasta. Then season with fresh tomato, oregano, salt and a drizzle of extra virgin olive oil or to your liking.
