In the Landes, during the “pig kill”, we used to prepare blood sausage in gut, but as we knew it didn't last long, we also took the time to put it in pots. Sterilized in this way, blood sausage could be stored longer. Obviously, our blood sausage is a family recipe, where spices are present, but without killing the taste of blood sausage.
