About CASAS DE HUALDO

Our EVOOs are the culmination of the work of many people throughout the year. In them, we capture the richness of the Hualdo estate and the dedication and care to produce truly unique products. They all have many aspects in common, which truly make them a family: They are made exclusively with our own olives, sourced from our groves and selected at the optimal moment of ripeness to get the best from each plot and variety. They are first extraction oils, always processed shortly after harvesting and under low-temperature conditions. We filter them using cellulose plates, as they are very gentle on the product, removing impurities and moisture they might have, which allows for better preservation. Inerted stainless steel tanks are essential to keep the oils as stable as possible in our climate-controlled cellar. We carry out the packaging almost on demand, as we know that our EVOOs are best kept in the cellar.Read their story
