Matcha (Premium Grade) Origin: Kagoshima (鹿児島), Kyushu Island, Japan Premium matcha (プレミアム抹茶) from Kagoshima is made from 100% green tea leaves of the second harvest of the new tea season. About twenty days before harvest, the leaves (tencha) are carefully shaded to protect them from sunlight. This process deepens their green color by increasing chlorophyll levels and produces thinner, softer leaves rich in flavor. After picking, the leaves are ground into a fine powder using a stone mill. Grown in Kagoshima’s nutrient-rich volcanic soil, this matcha offers a smooth, balanced flavor with gentle sweetness and mild bitterness. Its vibrant green color and full-bodied taste make it ideal for matcha lattes. The subtle bitterness of the tea harmonizes beautifully with the creaminess of milk. To prepare: whisk 2–3 g of matcha with 50 ml of warm water (65°C) until smooth. Add warm milk (60°C) for a rich hot latte, or pour over cold milk for a refreshing iced version.
