The loin de orza owes its name to the clay container that used to be used to store canned food. The orza is a tall vessel without handles in which the products of pig slaughter were kept in oil. Currently the spine is kept in glass jars, but the original name has been retained. The Orza Botularium loin is made from the traditional recipe and using the best ingredients.
