Iberian hams undergo a slow curing process in natural dryers, where temperature and humidity are controlled by opening and closing windows, so that dry air enters from the north and avoiding humid air from the south protected by the mountains of Gredos, Béjar and France, ending their refinement in the cellars in darkness and silence.
